
๐ Ginger Udon Glow

Ingredients
- 2 packs udon noodles
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 2 tbsp soy sauce
- 1 tbsp chili oil
- 1 cup mushrooms
- 1 handful spinach
- 1 soft-boiled egg per bowl
- 1 spring onion, sliced
- Sesame seeds for topping
- 1 tsp sugar
Instructions
- Cook the udon noodles according to the package instructions and drain.
- Warm sesame oil in a pan, then add garlic and ginger. Stir for about 30 seconds.
- Add mushrooms, soy sauce, chili oil, and sugar. Let everything bubble softly.
- Add the noodles and spinach. Toss until glossy and warm.
- Serve in bowls with soft-boiled egg, spring onion, and sesame seeds on top.
